4.15 Industry Analysis of Number of Establishments by Number of Employees for Target Market

A look at the pie below that breaks down the full service restaurants of Westchester county by the number of employees they have shows that 389 or 42% of the total 922 full service restaurants in the county employ between 1 to 4 employees. 226 full service restaurants in the county, or roughly 25%, employ between 5 to 9 employees. Restaurants like A Taste of Tuscany that employ between 10 to 19 people number 149 or approximately 17% of the total restaurants in the county. We feel very confident that with the larger staff we will be able to provicde much better service to our clientele.

County - this is not just a regional but a national trend - the cost of employees is one of the highest operational expenses facing any full service restaurant, besides of course the obvious capital expenses of putting together a much larger infrastructure - most full service restaurants tend to be between the 1 to 9 employee range and this is true of Westchester County as well where we see that over two thirds of all the restaurants in the County employ under 9 employees.
